According to "The Golden Legend" by Jacobus de Voragine, the martyrdom of Saint Lawrence consisted in grilling him to death.

The small town of Saint Laurent (Saint Lawrence) d'Aigouze, France, decided as an homage to the saint to erect this giant grill in the middle of a traffic circle.

    It means that as he was done on one side he asked his executioners to put him to grill on the other side.
