until this night my only experience with artichoke was from working in a grocery store and the yummy spinach-artichoke dip at that one restaurant (i cant remember the name!)
anyway, this was a light supper kind of night. no meats in this dish, though i think it would be great with lots of stuff!!!
i think next time it may be salmon's side dish
here its served with white steamed rice topped with fresh red onions and jalapenos. the artichokes were steamed and then grilled in a skillet with butter, fresh garlic, kosher salt, and fresh-cracked black pepper. cooked just until the garlic browned so as to not make it bitter, but still crunchy.
i had actually done 2 dishes with artichokes. the other was stuffed with lamb prepared like meatloaf. think stuffed green peppers and make it scads more "italiany". since both preparations worked out as well as they did i'd say this is a veggie to visit time and time again!
