I make these on Sunday Morning for Breakfast along with a bowl of Fruit and Coffee for a lite breakfast.
The leftovers go into the freezer for Breakfast on the go during the week.
Recipe
10-12 eggs
2-T milk
1-2 tsp season salt - or seasoning of your choice
1-1/2 cups of diced bacon-ham-turkey sausage
3 green onion s diced small
1-1/2 cups grated sharp cheese or cheese of your choice

Preheat oven to 375. Use silicone muffin pan,spray with pam.

In the bottom of muffin cups layer diced meat -green onions -cheese. Mix eggs and milk and seasonings. You then pore the egg mixture in fill to brim no more. Bake for 25-30 minutes until muffins have risen above the rim and are slightly brown and set.

When freezing, make sure to thaw in refrigerator before microwaving.

I found this on the South Beach Diet Web site. Breakfast- one less thing to think about
