From the Garrett Kitchens…
For your Christmas cup of tea, a fresh loaf of my Special Pumpkin Bread! This time I have included the recipe as my gift to all you, my cherished JPG friends. Here’s wishing you all the merriest of holiday seasons!
Preheat oven to 350° F
Grease and flour 3 standard loaf pans
Mix together in this order:
3 cups granulated sugar
1 cup canola oil
grated zest of one large orange
1 can solid pack pumpkin (15 oz.)
2/3 cup orange juice
3½ cups all purpose flour
1½ tsp. salt
1½ tsp. cinnamon
1½ tsp. nutmeg
½ tsp. cloves
1 cup chopped dates
1 cup chopped walnuts
Pour into 3 pans and bake for 55-60 minutes. Turn out of pans immediately to cool. Cover in an airtight container. This loaf slices better (and tastes better) if it mellows for at least 24 hours before serving. Should be refrigerated after 2 days. Freezes well. Delicious with cream cheese!
