My resolution for 2011 is to eat more fresh foods. I love this salad and with a low-fat dressing it is very healthy.

Gorgeous! Wish I were there to partake. I think raw spinach has more taste than lettuce, so prefer to use it when I can. We had homemade Chicken and Broccoli Soup (made without the heavy cream).
