Spargelsaison, the German season of white asparagus (Spargel), a delicious spring treat we can have here in Missouri too if you grow your own. The German method is to heap earth in mounds around the asparagus to keep the shoots away from sunlight to prevent the development of chlorophyll that turns the plant green. For me 8 inches of mulch or grass clippings does the trick.
