The Making Of Swiss Cheese

This summer I was privileged to visit a swiss cheese manufacturer at his alpine cabin in the Bernese Oberland. During summer he is producing two to three loafs of fresh alpine cheese a day, depending on the amount of milk provided by his own cows at the alp.
I found him at work already while the morning light fingered through the windows of his wooden cabin at an altitude of about 5000 feet.
His grandfather already manufactured cheese at this very place. So the alp is a family heritage and a cultural legacy at the same time.
