Mother baked pumpkin pies.
For the Thanksgiving table...
As long as she was able.
It was a treat for sore eyes!
One time the pumpkin
Filling in her pies,
Gave us and the invited kin
An unexpected surprise!
None complained about its taste
Not a crumb would go to waste...
We would eat this pretty dessert,
And no feelings would be hurt.
Then Mom took her first bite...
She exclaimed with vim and vigor~
"OH NO! .. I forgot to add the sugar;
You've all been so polite!!!!... "

This is a true story...We all laughed about it afterward..My aunt who had diabetes thought Mom left out the sugar for her sake.
Both my parents and my aunt and uncle are no longer with us, but the memories remain to this day..I baked these pumpkin pies yesterday shown on this picture but I wasn't intending to make so many...The filling exceeded the two pie shells and I ended up with three pies instead of two...However, I did remember to add the sugar:)

Thank you for your comments. I don't know why it is but pumpkin pie always tastes better the next day and not on the same day as the pie is baked. I'll bet Susan's recipe is good, Donald if you won't eat any other..I just follow the recipe on the back of the can of pumpkin pie filling, except I used fat free evaporated milk for less calories. I also bought the frozen pie shells at the store for the easier route:) Cooking isn't my strong point:)
