I’m using my favorite cooking tool of all time, a Wuestof Grand Prix II chef’s knife, to prepare an aromatic flavor base for chicken soup. In French cuisine, that is known as Mirepoix and is generally composed of 3 main parts: onion, carrot and celery.

We used the same vegetable for our "nilaga". Ed got that knife set several christmases ago and I have never scene it or used it. It is so precious to him that he just take it out for special occassion. I can not even touch it, lol. Wonderful theme entry, Don!

I bet it is the yummiest soup too. A great shot and entry Donald. I have a favorite knife too. No one is allowed to touch it but me and it makes dicing and slicing a breeze.
