After watching an episode of "Samantha Brown Great Weekends," I knew that I MUST have a Borough Market Cheese Sandwich when I went back to London. It took awhile to find, but was well worth the effort. These fellows produce their own cheese and put gobs of it on sourdough bread for a simple, fabulous toasted cheese sandwich.

Dorsey's mother used to bake sour dough bread when she was alive and it was delicious....It is a rather lengthy process of storing the dough and adding more to it..until it sours..By the way what is that green stuff in the aluminum pan? Is it pickles to add to the sandwich?
