Recipe for Fruited Quinoa by Kelley Smith
1/3 cup rinsed quinoa
2/3 cup fruit juice
splash of lemon juice
1/2 cup of fruit of your choice
Makes a great breakfast or toss with some lemon chicken for a great light lunch!
Bring the quinoa and the fruit juices to a boil. Cover and reduce heat letting simmer for 15 minutes. Can be served cold or warm. If serving warm, toss with fruit immediately and serve. If serving cold, chill and then toss with fruit.
