Early each morning at 5 am, the women of Kep meet the returning crab boats to begin the day's work. Wading out to the boats, they return to sort the catch by size on the rocky shoreline. They return the crabs to the sea in bamboo cages to retain their freshness. The market comes to life as buyers arrive. Crabs are also kept for their restaurants that prepare nightly dishes of fresh fare. The crab ladies of Kep are widely known for their crab cooked with Kampot pepper, grown locally, and coconut milk. It is heaven on earth!
