Norwegian Lutefisk Supper, 2013
5 Nov 2013
Each fall the annual Norwegian Lutefisk Supper takes place at Our Savior's Lutheran Church in Beldenville, Wisconsin, the last Thursday in October. The first supper held here began on Dec 3. 1948. The average guest list is between 1,200 and 1,300. The menu consists of lutefisk, Swedish meatballs, gravy, potatoes, lefse, flat bread, grot, salad, Norwegian delicacies, and coffee.
Preparations for the meal begins in August. 1,300 lbs.of fish is ordered through a local dealer . Five bushels of cabbage are used in the salad, 360 lbs. of potatoes, 200 lbs. of butter, 50 lbs. of coffee and 70 dozen tea rolls.
(The above information was from one of the old cookbooks that was sold there in 1998 and it may not be up to date this many years later.)
Not everyone is fond of lutefisk but I have acquired a taste for it because it was a tradition for our family when I was growing up to have it in a Christmas meal. Our family got together with one of my aunt and uncles who always served it at Christmas time also...Although my parents are both gone plus the aunt and uncle who shared their lutefisk meals with us during the holidays past, sweet memories linger yet of the following Norwegian prayer we faithfully said at the table before the meal was served.
Jesu navn gar vi til bords,
in jesus name we go to table,
at spise og drikke pa dit ord,
to eat and drink at thy word,
dig gud til aere os til gavn;
thou god to honor, us to be gifted;
sa far vi mat i jesu navn.
So receive we food in jesus name.
